![]() It's shocking to me that I'm even writing about a recipe that contains cilantro - because I just do not like it!!!! But even more shocking is that I bought a cilantro plant that I plan to get in a pot today so that I can grow my own... all because of this salad dressing that I'm obsessed with! And while I"m at it, I might as well confess that I've never really like salad dressing of any kind.... But this one has changed everything for me! Best of all, it's even healthy!!!!! This recipe uses really simple ingredients and takes almost no time to prepare. In fact, the hardest part is picking those leaves off the stems - oh, but I have a solution for that, too! ![]() Cilantro is rich in phytonutrients, flavonoids, and phenolic compounds. Cilantro is very low in saturated fat and cholesterol, and the caloric value is nearly nonexistent. It is a good source of dietary fiber, vitamins A, C, E, K, calcium, iron, potassium and magnesium. Cilantro is also excellent for detoxing your body, particularly for binding with heavy metals helping to remove them. So with all of this goodness, I have always wished I could like cilantro. but it always tasted like soap to me, until now!
My favorite way to use this dressing is on a salad loaded with goodies like romaine, kale, cabbage, shredded brussels sprouts, diced avocado, walnuts, almonds, pumpkin seeds, & hemp seeds. But it's also wonderful on top of Mexican food such as a bean and cheese burrito topped with my homemade yogurt!
