Who doesn't love strawberries?!! They are a sure signal spring has arrived when you can find fresh, locally grown strawberries in your grocery store or farmers market. We love to eat them just sliced up alone or as a topping, but there's something even more yummy about having that thick syrup that you get when they are used to make a compote. We love strawberry compote on yogurt, pancakes, french toast or biscuits for breakfast, and as a topping for cake and ice cream for dessert.
This recipe is a quick, easy and the healthiest way I've found to make strawberry compote with just 4 simple ingredients.
Ideally you want to start with fresh, organic strawberries, because strawberries are #1 on the Environmental Working Group's (EWG) Dirty Dozen list of produce containing the most toxic pesticides, and "strawberry growers use jaw-dropping volumes of poisonous gases – some developed for chemical warfare but now banned by the Geneva Conventions – to sterilize their fields before planting...". If you want to avoid pesticide residue and strawberries grown in nerve-gas injected fields, you MUST buy organic. More information about this can be found HERE.
The only way to reduce your toxic exposure from strawberries, because you can not wash off the pesticides and nerve gas residues, is to go organic. The good news is, even when strawberry season is over, you can buy fantastic, frozen organic strawberries that were perfect to use in this recipe - just thaw them completely and drain off the liquid first before adding to your Instant Pot.
Although it's optional, I highly recommend adding 1-2 drops of doTERRA's ginger oil after the strawberries have cooked and pressure has been released. It gives the strawberries a dimension in flavor that you have to taste to understand! If ginger is not your thing (try it before you make that decision!) then adding 1-2 drops of doTERRA's On Guard Blend or Lemon oil is also really good!
Don't worry that there seems to be too much liquid, because it will solidify and turn to a nice syrup as the fruit cools.
