You know that summer has arrived when the peaches show up at all the road-side stands! Peach sauce over yogurt, ice cream, pancakes, etc is delightful, especially with the hint of cinnamon! This recipe is simple, has only a few ingredients and no corn syrup! It's fast and easy to make, and you control the quality of the ingredients!
This recipe makes about 6 cups.
Ideally you want to start with fresh, organic peaches, because peaches are #5 on the Environmental Working Group's (EWG) Dirty Dozen list of produce containing toxic pesticides. EWG's analysis of tests by the U.S. Department of Agriculture found that nearly 70 percent of samples of 48 types of conventionally grown produce were contaminated with pesticide residues.
The only way to reduce your toxic exposure from peaches, because you can not wash off the pesticides is to buy organic. The good news is, even when peach season is over or if you can not find organic peaches, you can buy frozen organic peaches (without added sugar) that are were perfect to use in this recipe - just thaw them completely and drain off the liquid first before adding to your Instant Pot.
